Rajbhog Recipe
Ingredients:
Cashew nuts - 2 tbsp
Cottage cheese - 200 gms
Almonds - 2 tbsp
Saffron - 1/2 tsp, soaked in warm water
Cardamom powder - 2 tbsp
Yellow color - few drops
Pistachios - 5 - 10
Water - 4 cups
Sugar - 2 cups
Method:
1. Put the cashew nuts, pistachios, almonds along with cardamom powder in a mixer grinder. Mix it wel so that a powdered mixture is formed.
2. Pour the saffron milk into the powdered mixture. Make it into a very thick paste.
3. Now, use this nut paste to make tiny-sized balls.
4. Knead the cottage cheese and then divide into two portions. To one portion, add saffron and yellow colour, and let the other portion remain white.
5. Prepare small sized balls from both the portions of the cheese.
6. Now, carefully put a nut ball within a white cheese ball. And then, wrap the white cheese ball with a colored cheee ball. Repeat the same process for all the balls.
7. Next, make the sugar syrup by dissolving the sugar in boiling water, till it reaches one thread consistency. Now cautiously dip the cheese balls in it. Let it boil over medium heat for about 20 minutes.
8. Remove from flame and allow it to cool down.
9. Rajbhogs taste really succulent when served with sugar syrup.
