- Chicken Malai Kebab
Chicken Malai Kebab Recipe
Ingredients:
Boneless chicken cubes - 800 gms
Cheddar cheese - 1/4 cup, grated
Coriander leaves - 4 tsp, chopped
Cornflour - 1 tbsp
Cream - 1/2 cup
Egg - 1
Garlic paste - 7 tsp
Ginger paste - 3 tbsp
Green chillies - 8, chopped fine
Mace powder - 1/2 tsp
Nutmeg powder - 1/2 tsp
Oil for basting
Salt to taste
White pepper powder - 1 tsp
Method:
1. Mix the ginger and garlic pastes, white pepper powder and salt.
2. Rub mixture onto the chicken pieces. Set aside for 15 minutes.
3. Beat together egg, cheese, green chillies, coriander, cream, mace, nutmeg and cornflour and rub chicken pieces with the mixture.
4. Keep aside for 3 hours.
5. String together chicken pieces on a skewer an inch apart.
6. Roast on a charcoal grill for 5 minutes or in a preheated oven at 275F for 7 minutes. Remove. Hang skewers for 5-7 minutes to let excess moisture drip off.
7. Brush with oil and roast again for 3 minutes.
