Chiroti Recipe
Ingredients:
Maida - 1/2 cup
Fine chiroti rawa - 1/2 cup
Wet Rice flour - 2 tblsp
Salt - a pinch
Ghee - 3 tblsp
Oil and Vanaspathi - for deep frying
Powdered sugar - for dusting
Method:
1. Mix rawa, maida, 1 tblsp ghee, a pinch of salt together with the flour.
2. Add ice cold water and knead to a stiff dough.
3. Keep closed under a wet cloth.
4. Knead well, till dough becomes soft and pliable.
5. Rub 2 tblsp of ghee with rice flour on a flat plate till it becomes white and frothy.
6. Divide the dough into 6 medium sized balls.
7. Roll it out into very thin chappathis.
8. After rolling out first chappathi apply 2 teaspoon of prepared ghee, rice flour mixture and place another chappathi on top.
9. Repeat the process till 3 chappathis are in one pile.
10. Roll it lightly like a mat from one end to the other to a shape of cylinder.
11. Cut the cylinder into 7 or 8 pieces.
12. Prepare other sets of chappathis in the same manner.
13. Press each round with hands into medium thickness.
14. Deep fry one by one in hot oil in medium flame.
15. Remove from fire and sprinkle powder sugar on both sides and arrange on a flat plate.
Note: if chiroti rawa is not available, plain maida can be used. Just add 1/2 tblsp more vanaspathi to the dough.
