Hungarian Mushroom Soup Recipe

A wonderful, delicious and easy to make Hungarian style soup with mushrooms.
Hungarian Mushroom Soup

Ingredients:
Mushrooms – 175 gms, chopped (preferably shiitake)
Onions – 1 cup, chopped
Butter – 2 tblsp
Water – 1 cup
Soy Sauce – 2 tsp
Paprika – 2 tsp
Plain Flour – 1 1/2 tblsp
Plain Milk – 1/2 cup
Lemon Juice – 1 tsp
Sour Cream – 1/4 cup
Parsley – 2 tblsp, chopped
Dill – 1/2 tsp
Salt as per taste

Method:
1. Heat 1 tblsp of butter in a pan.
2. Add the onions and saute well.
3. Add 1/2 tsp of salt and cook for 2 minutes more.
4. Add the mushrooms, dill, soy sauce, paprika and water.
5. Stir well and cover the pan with a lid.
6. Simmer for 10 minutes.
7. Heat the remaining butter in another pan.
8. Add the flour and mix well.
9. Add milk and cook for 5 minutes over low flame or until thick.
10. Add this to the mushroom mixture and stir.
11. Cover and simmer for 5 to 10 minutes.
12. When ready to serve, add salt, sour cream, pepper powder and lemon juice.
13. Stir and garnish with parsley.
14. Serve at once.
