Brinjal Pachadi Recipe
Ingredients:
1/4 kg brinjal
1/4 kg potatoes (boiled and mashed)
1/4 kg tomatoes (chopped)
2 onions (sliced)
6 green chillies
1 tsp black gram dal
a few coriander and curry leaves
a little oil
a pinch of turmeric
salt to taste
1/2 cup curd
Method:
1. Chop the brinjals into small pieces.
2. Add the turmeric and boil the brinjals.
3. Grind the green chillies, onion, tomatoes, brinjals and the mashed potatoes.
4. Heat oil in a pan.
5. Put the mustard and black gram dal and fry till red in colour.
6. Put the coriander and curry leaves.
7. Add the mashed pachadi and stir well.
8. Add a little water and salt.
9. Cook for a while.
10. Remove from fire and add the curd.
When serving with rice, add a little ghee. This goes well with chapathi, dosai, idly and poori.
