Shahenshahi Aloo Recipe
A delicious potato preparation
Ingredients:
1/2 kg potatoes
1 small tomato
1 large onion
2 cups curd
8-10 mint leaves
2 green chillies
few coriander leaves
1 tsp poppy seeds
1/2 tbsp garam masala
2 black cardamoms
1/2 tbsp red chilli powder
1/2 tbsp cumin powder
1/2 tbsp coriander powder
1 tbsp butter
oil for frying
salt to taste
Method:
1. Peel and prick potatoes with a fork.
2. Grind together onion, poppy seeds, mint, chilli powder, cumin powder, coriander leaves, green chillies and cardamoms.
3. Boil potatoes with a little vinegar so that they retain their whiteness. Add 1 teaspoon butter to the potatoes.
4. Heat oil, fry the ground masala for 5-7 minutes. Add curd and tomatoes. Fry for 3 minutes.
5. Put the potatoes and fry for another 5 minutues.
6. Add the garam masala and salt. Add 1 cup water and cook on low heat.
7. Garnish with coriander leaves and serve hot.
