Sweet Lime Pickle Recipe

Ingredients:
1kg limes
500gms seedless raisins
700gms sugar
3tsp chilli powder
1 1/2 pint vinegar
salt to taste
garlic 20 cloves
50gms ginger

Method:
1. Grind in vinegar garlic and ginger.
2. Quarter the limes and remove seeds.
3. Sprinkle with salt and keep aside for three days, turning them over three times a day
4. Soak in the vinegar for 24hrs before starting prepartion.
5. Mince the limes and raisins.
6. Dissolve the sugar in the vinegar over a low flame.
7. Add all the remaining ingredients and bring to a quick boil.
8. Reduce flame and simmer till it thickens.
9. Remove from fire and allow to cool thoroughly.
10. Bottle and store in dry cool place.
11. Ready for use in a week.
