Rava Vadas Recipe

Ingredients:
2 cups rava (semolina)
5 green chillies
1 inch piece ginger
a little fresh coriander
salt to taste
oil for frying

For the seasoning
1 tsp mustard seeds
2 tsp bengal gram dal
2 tsp black gram dal
2 tbsp oil
2 sprigs curry leaves

Method:
1. Chop the green chillies, ginger and coriander
2. Heat the oil and add the seasonings. Fry. When done, add the chopped ingredients. Fry for 1-2 minutes. Add 2 cups of water, salt and the chopped coriander. Bring the water to a boil.
3. When the water is boiling, gradually add the rava and cook on low heat until all the water is absorbed. Remove from fire, transfer on to a plate and cool.
4. When cool, divide the mixture into small balls and flatten into vadas (patties)
5. Deep fry the vadas in hot oil and serve hot with chutney.

Makes 30 vadas.
