- Bitter Gourd Chutney
Bitter Gourd Chutney Recipe
Ingredients:
250 gms bitter gourd
8 green chillies
1 lemon sized ball tamarind
1 small piece jaggery
1/4 tsp tumeric powder
3 tbsp oil
salt to taste
2 sprigs curry leaves
Roast dry and powder
1 tbsp sesame seeds
1/4 tsp fenugreek seeds
1/2 tsp cumin seeds
Seasoning
1/2 tsp mustard seeds
1 1/2 tsp black gram
1 1/2 tsp bengal gram dal
Method:
1. Cut the bitter gourd into small pieces. Chop the chillies.
2. Heat the oil and add the seasonings. When done, add the chillies and fry for a minute or two. Add the gourd pieces along with the turmeric and fry until soft.
3. Boil the tamarind with a little water, and squeeze to extract the pulp. Add this to the vegetable along with salt and jaggery. Cook till the chutney is thick. Add the powdered masala, cook for a few more minutes, and remove from fire.
The chutney should keep for a few days.
