Colocasia Roast Recipe
Seppankizhangu/Chembu/Arvi/Colocasia Roast
Ingredients:
750gm colocasia (Yam/Seppankizhangu)
3/4 cup oil
2tsp chilly powder
2 tsp coriander powder
1/2 tsp turmeric powder
salt to taste
1 small piece tamarind
Seasoning
1 tsp mustard seeds
2 tsp black gram
2 sprigs curry leaves
2 dried red chillies, broken into pieces
Method:
1. Soak the tamarind in boiling water, and squeeze to extract the pulp. Boil the yam, peel the skin and cut into rounds.
2. Mix together the chilly, turmeric, and coriander powders along with some salt.
3. Smear the pieces with this masala.
4. Heat the oil and add the mustard. When done, add the dal, red chillies and the curry leaves. Add the yam pieces, tamarind extract and fry on high, turning occasionally. If additional crispness is desired, add some more oil while frying.
