Cabbage and Groundnut Salad Recipe
Ingredients:
1 small cabbage
1 large lemon
1 tbsp grated coconut
1 tbsp groundnuts (peanuts)
2 green chillies
handful of chopped coriander
salt to taste
Method:
1. Cut the cabbage into very thin strips and place in a bowl of cold water.
2. Roast the groundnuts and grind to a rough powder. Fry the coconut gratings to a light brown, and mix with the groundnuts. Extract the lemon juice.
3. Since this dish has to be served immediately, keep all the ingredients ready and mix only when ready to serve.
To serve:
Drain all the water from the cabbage and place in a large mixing bowl. Add all the ingredients except half of the chopped coriander. Mix well and transfer to a serving bowl. Garnish with the rest of the chopped coriander and serve immediately.
