Sponge Cake Recipe
Ingredients:
1 1/2 cups flour
1 cup sugar
1/2 cup butter or margarine
1 tsp baking powder
3/4 cup milk
1 tsp vanilla essence
2 eggs
Method:
1. Grease a cake tin with butter
2. Sift the flour and baking powder, and set aside.
3. Beat the sugar and butter to a cream. Beat the eggs separately.
4. Add the eggs gradually to the creamed mixture, beating as you go along. If the mixture curdles, add a pinch of sifted flour.
5. Add portions of the milk and flour alternately, beating all the while. Add the essence and mix. Pour the batter into the tin and bake at 190C (375F) for 20 to 25 minutes, or until the top is lightly browned.
6. Remove the cake from the tin by loosening the sides. Cool.
