Potato Cauliflower Dry Curry Recipe
Ingredients:
2-3 large potatoes
1 small cauliflower
1 tablespoon chopped coriander
2-3 tablespoons oil
salt to taste
For the masala
2 dried red chillies
1/2 teaspoon turmeric
2 tablespoons coriander seeds
a pinch of asafoetida
2 tablespoons grated coconut
Seasoning
1 teaspoon mustard seeds
2 sprigs curry leaves
Method:
1. Boil, peel and cut the potatoes into large pieces. Break the cauliflowers into florets and cook with very little water until soft.
2. Grind the ingredients for the masala to a very smooth paste. Smear the vegetable pieces with this.
3. Heat the oil, season with the mustard and curry leaves and add the vegetables. Fry until all the water has been absorbed, and the vegetables are dry. Add some more oil while frying if you desire it crisp and brown. Garnish with the chopped coriander.
