Neyyappam Recipe
Ingredients:
1 1/2 cups flour (made by washing rice, drying it immediately and powdering it)
1/2 cup maida
1 tsp baking powder
1 tbsp butter
170gms jaggery
5 cardamoms
10 gms fresh coconut (chopped)
1 banana (mashed)
Method:
1. Melt the jaggery with half a cup of water over a low flame.
2. Allow it to cool for 5 minutes.
3. Then add all the ingredients and make a batter of dropping consistency.
4. Ferment the batter for an hour.
5. Grease small moulds upto half with the batter.
6. Bake for 25-30 minutes at 350F
