Soup Sticks Recipe
Ingredients:
Maida - 2 cups (level)
Dry yeast - 1 tsp (level)
Caraway seeds - 1/4 tsp (cake seeds)
Sugar - 1 tsp
White butter - 3 tsp (soft)
Salt - 1/4 tsp
For glaze on top:
Sugar - 1 tsp
Warm milk - 1 tbl sp
Method:
1. Serve maida with salt.
2. Heat 1/4 cup of water till luke warm and mix yeast and sugar to this.
3. Keep closed in a wam place for 10 minutes to activate the yeast.
4. Take flour in a broad basin and mix caraway seeds, salt and butter till it blends well with the flour.
5. Make a well in the centre and pour yeast mixture in it.
6. After one minute gather flour using finger tips and make a stiff dough using more warm water.
7. Apply little oil to the vessel and put this dough in it and close it with a wet muslin cloth and keep aside for one hour (till the dough doules in volume)
8. Make lemon sized balls out of the dough and shape it like thin sticks (do not knead the dough again)
9. Place these sticks on a buttered baking tray leaving enough gap in between.
10. Close with a wet muslin cloth and keep aside for 1/2 an hour.
11. Pre heat the oven with maximum temperature.
12. Mix sugar to warm milk and brush it on top of the sticks.
13. Bake this for 7 minutes and reduce the temperature to 100C
14. Turn the sticks gently once and bake till golden brown and crisp. Keep in dry air tight containers.
