Drumstick Vadai (Murungaikai Vadai) Recipe
Ingredients :
Bengal gram dhal - 1 cup
Roasted dhal - 1 cup
Drumsticks - 5
Big Onions ( chop finely) - 2
Small Onions - 3 or 4
Green Chilles - 10 to 12
Garlic - 2 flakes
Ani Seeds - 1/2 tbsp
Salt - as required
Oil - to deep fry.
For Vadai :
Dehusked Balck gram - 1 cup
Cumin seeds - 1 tbsp
Salt - as required
Oil - to deep fry
Method :
1. Soak dhal in water for 2 hours.
2. Cook drumsticks and scoop out the pulp.
3. Grind dhal and roased gram together to coarse paste.
4. When it is half of done add chilles, small onions, crushed garlic and drumsticks pulp and salt.
5. Grind again for few seconds.
6. Add aniseeds, chopped onions and mix well.
7. Soak dhal in water for 15 minutes.
8. Drain water completely and grind to coarse paste preferably in stone grinder using minimum water possible.
9. Add salt, cumin seeds and 3 tbsp of hot oil along with the above mixture to the dough.
10. Make small balls and pat on a wet cloth to make thin vadai.
11. Make a hole in the centre and deep fry in hot oil.
Note : Banana Flower Vadai:
Remove yellow stigma from the banana flower and chop finely. Steam it in cooker till one whistle sound withsalt. Instead of drumstick use this cooked flower in the above recipe.
