Palak Chole

Ingredients:
Ghee – 2 tbsp
Cumin seeds(Jeerakam) – 1 tsp
Tomato puree – 1 cup
Red chilli powder – 1 tsp
Garam masala powder – 1 tsp
Salt – As reqd
Chickpeas(Kabuli chana) – 1 cup
Spinach – 2 bunches
Green chillies – 3 – 4 nos
Ginger – 1 inch piece
Garlic pods – 4 – 5 nos

Method

1)Wash and soak chickpeas in 4 – 5 cups of water for 5 – 6 hours.

2)Drain, add 3 cups of fresh water and pressure-cook till done. Drain and refresh.

3)Remove stalks, wash and blanch spinach in boiling water for 2 minutes. Drain, refresh and blend to a puree.

4)Remove stems and wash green chillies.

5)Peel and wash ginger and garlic.

6)Grind the three to a coarse paste using a little water.

7)Heat ghee in a kadai.

8)Add cumin seeds and sauté till it changes colour.

9)Add green chillies-ginger-garlic paste and fry for a while.

10)Add tomato puree, red chilli powder, garam masala powder and salt and fry for a few minutes or till the ghee leaves the sides of the pan.

11)Add spinach puree and chick peas and stir gently.

12)Cover and allow to simmer on low heat for 5 – 6 minutes.

:- Serve hot.
