Ingredients :
Semolina - 3 cups
Rice flour- 1/3 cups
Sour Buttermilk- 1/4 cup
Onions ( finely chopped ) - 2 medium sized
Green Chillies ( finely chopped ) - 4
Coriander leaves - 1/2 cup
Ginger ( grated ) - 1 " piece
Salt to taste
Tempering :
Oil - 1 tsp
Mustard seeds - 1 tsp
Split black gram dal - 1 tsp
Oil for frying
Method :
1. Mix semolina, rice flour, sour buttermilk and salt and allow to ferment for 6-8 hours.
2. Heat oil in a small frying pan and temper with mustard seeds ans split black gram dal. Add to batter. Add onions, green chillies, coriander leaves, and ginger.
3. Make sure that the batter is thinner that that of masala dosais, and pour out thin dosais, making each dosai crisp and brown.
4. serve hot with thengai chutney.

Do away with rice flour and add soaked and ground urad dal instead. Tastes better and makes healthier eating too.
