Lemon Glazed Vegetables Recipe
Ingredients:
1/2 kg baby potatoes - boiled and halved
1/2 kg steamed cauliflower florets
1/2 kg snow peas/ beans
Lemon glaze
1 tbsp butter
1/2 tsp garlic paste
2 tsp sugar
1/4 tsp ground ginger
1/4 tsp ground coriander
2 tbsp corn flour
300 ml stock
2 tbsp lemon juice
Garnish
1 tbsp shredded, blanched lemon peel
1 tbsp toasted shredded almonds
Method:
Keep potatoes and cauliflower hot, and saute the snow peas/ beans are in butter.
Remove and add beans to the vegetables.
Cook garlic, sugar, ginger and coriander in same pan with remaining butter.
After 1 minute, stir in blended corn flour and stock. Thicken.
Sharpen with lemon juice. Season well.
Serve immediately, garnished with lemon peel and almonds.
