Veg Omlette Recipe

Ingredients:
Eggs - 4 nos
Carrot - 1 no. (grated)
Capsicum - 1 small (if big take ½ part) (chopped)
Cabbage - small piece chopped finely (1/4 cup pieces)
Beans - 4 – 5 nos. (chopped and keep in boiling water for 2 min. then strain)
Onion - ½ piece chopped
Green chillies - 2 nos. chopped
Pepper powder – ΒΌ tsp Salt - as per taste
Pudina - 10 leaves (chopped finely)
Coriander - 5 – 6 twigs (chopped finely)

Method :
Break eggs in to a bowl beat them well add pepper and salt again beat well.
Now add grated carrot, chopped capsicum, cabbage, beans, onion, pudina, coriander mix them well.
Heat the fry pan or tava pour ½ tsp oil and spread it whole pan then pour the mixture with a spoon and spread it just like dosa.
Keep a lid cook for 3-4 mins.
Then turn and cook again by placing the lid and take into plate.

You should always cook this on sim flame only never keep the flame medium or high becoz vegetables have to cook. You can get 4 – 5 medium sized omlettes with this mixture. This is very nutritious for every one.
