Chickpea and Cherry Tomato Salad

Cherry Tomatoes – 250 gms
Chickpeas – 200 gms, soaked, drained and rinsed
Onions – 1, finely chopped (optional)
Mozzarella (or Feta) Cheese – 200 gms, shredded
Capsicum – 1, sliced
Spring Onions – 1/2 bunch, chopped
Black Olives – 1/2 cup, pitted
Juice of 1 Large Lemon
Garlic – 1, small clove, crushed
Extra-Virgin Olive Oil – 2 tblsp
Basil Leaves – handful, chopped

1. Heat oil in a pan over medium flame.
2. Add the cherry tomatoes and cook until soft, about 2 to 3 minutes.
3. Remove and cool.
4. Add all the remaining ingredients in a large bowl.
5. Add the tomatoes and gently toss until well combined.
6. Serve.
